Vacation Bible School/What I'm Loving!

I love Vacation Bible School!! I loved it as a child and I love it now! I am so excited because Jagger has a class he can go to and guess what???? He loves it!! I am so happy! He even goes to the opening ceremony and stays with his group! Mrs. Jo Beth says he never asks for me! I ask him yesterday what he learned about and he says Star Wars! I ask him again, and his answer was Star Wars..I finally look at him and say, "Jagger, if I ask Mrs. Jo Beth, if she taught you about Star Wars, she will say yes...You better not be lying!" He looks at me and says without any hesitation, "Jesus walked on water!" I cracked up laughing! He is so funny!!! I have a fun job at VBS..I am getting to feed all the workers! We do themed food and everyone loves it! and you know I love it because I love food!!! :) Jesus and food...doesn't get any better!
I am also very excited because Bennie is coming to stay with us this weekend! I can't wait to see her! Tonight I am working on cleaning house and getting laundry done because our days are so busy at church!
We had a GREAT Memorial Day weekend! I am so mad at myself because I didn't take any pictures! I am going to have to steal some from Aunt Julie! It is one of my favorite weekends because it is so laid back! We laid by the pool all day every day! I am very proud of the tan I am getting and summer has only started!
and since it is Wednesday I will go ahead and show what I am loving!!!

I'm LOVING the turkey burger from Hardees...It is super yummy and less than 500 calories..I get it with no mayo so even less than what it is!
I'm LOVING Confetti Cake Blizzard from Dairy Queen!!!!! Yes..It is amazing..I have had several...actually more than several! I am probably just partial to them considering that Confetti Cake is my ABSOLUTE favorite!!!! See...now that I am talking about it, I'm thinking about sending Matthew to get me one!!

Fitting in!!

Do you know what it's like to feel like you never fit it? Some of you may be shocked to read this but this is me!! This is something I have dealt with forever!!! It's hard to explain but it is something that has been apart of me and I'm still learning everyday how to overcome! I grew up an only child and we always lived away from family. I never was around a lot of cousins so I really never had to experience sharing or being apart of a large group. in school, I'm so grateful I had great friends!!(Amy, Sarah, and many others). This helped when I would feel down about grades, talents, etc. I was definitely not the smartest! I did work hard but not hard enough. School was more of a social event for me- which I regret so bad now! I did graduate with honors and even at that I didn't try super hard! I remember being in class right before a test and asking Amy what was going to be on the test!! She was the smart hard working one! I was never really athletic! I did cheerleading until 9th grade and then quit because it was just another expense we didn't need! I did a few pageants in school and loved them but then when it got to where I needed a talent I quit because I didn't have one!! I don't think riding a dirt bike qualifies as a talent! :) once I got into college all I did was work! My senior year my dad was hurt very badly and mom really didn't have time to help with all the college stuff so I really didn't apply for scholarships or anything! I think this is where I really missed the boat! I went to the community college for a year then transferred to the state school. I worked a full time job and was not into school. I never joined a sorority or got involved! I ended up quiting school for awhile then started back up online. Another regret!! When Matthew and I got married, I moved to his town where I really didn't feel like I felt in. The first year was horrible. I felt I had nothing in common with anyone. One day, I was feeling pretty horrible about myself because I had no special career or degree, no talents, I wasn't apart of a sorority or group in college , no social life outside of being a stay at home mom and then it was like God showed me that I didn't need all those things.. That I fit in perfect with him, and that he was so proud of me. Instantly I started feeling better and that is when I got involved in church and it has been a blessing ever since! I love our church so much! It's amazing how we can get so negative about ourselves and start thinking that we need all these "things" to make us who we are but none of that matters! There are days that I do get down for about two minutes and then I am reminded that I am apart of a super special group-I am a child of God!! Im so grateful for the life God has given me. I may not have been the smartest, most talented, or whatever else but I look back now and would go through it all again because it has made me the woman I am today! Its awesome how God works things out for a reason, and while we are going through we don't understand, but when you look back it's totally worth it! I hope this was not a lot of rambling but it's been on my mind!!! Hope everyone has had a blessed Friday!!

Summer is here!!!

Jagger has been asking Matthew and I every week since Easter if it is summer yet? Well, Grandma Betty has had her pool open for about 2 weeks now and the other day he ask if it was summer and I told Matthew since it has been very hot outside and we have pretty much been swimming everyday all ready we can go ahead and say its summer!! When I answered yes to his question, you would have thought Santa came!! He was jumping up and down! What can I say? We LOVE summer here at the Cohn house. We handle heat a lot better than cold!! I love how exciting summer is! The atmosphere in our town is happy! All the kids are getting out of school. The ball park is busy. There is talk of vacations.. Just all the good stuff! And I'm very excited, I finally found two swimsuits!! Thank you Target! Honestly I have not felt this good in a swimsuit since before I had Jagger! So we are trying to decide if we are going on vacation again this year!! I think we probably will, but we are just needing to figure out what we want to do!! I'm hoping beach! I really don't see us doing anything else! Flash forward to September, and I see us laying on the beach and Jagger digging in the sand with his John Deere tractors! Sounds perfect! But until then we will just enjoy the pool and lake! What do you do to enjoy the summer? Hope you have had a blessed day!!!

Mother's Day!!

We had the BEST Mother's Day weekend!! I did not want it to end! It was perfect! The only thing that would have made it better was if Matthew would have been with us! Friday night after work, we drove to Bennie and Poppies! It was late once we got there but Dad had steak and french fries cooked to eat! Yummy!! After we ate supper, mom and I went to Wal-Mart! This was awesome because Dad watched Jagger and let us go by ourselves! and then I was super excited because my mom NEVER gets out late. This is the 1st time in 20 years we have ever been to Wal-Mart late! We had a blast picking out stuff for Amy's Baby shower! and of course getting stuff for Jagger! ;) He was jumping up and down when he saw his new Batman underwear and Avengers shirts! Once we got home from Wal-Mart, Jagger and I went to my friend Sarah's house! I have not got to visit with her in a year or more! I am so happy I went! We laughed so much just talking about high school and tons of other memories!
The next morning, Jagger was up at 6am wanting to ride his 4-wheeler! We all sat outside, drank coffee and watched him ride! About 730, Dad got up to start getting ready to go to Grandma's. Jagger was so sad because he wanted to go! Dad said he could go if his mommy said he could! Guess what? I said yes, that would be great! My dad offering to watch Jagger all day???? Yes...I was so excited! It worked out great because I knew Jagger would not have fun shopping, and going to a baby shower! I was kind of nervous because Dad has never watched him ALL day!! Once they got on the road, mom and I got ready! We went to town and did some shopping, then went to the Baby shower! It was so sweet! I was glad to see Amy! I have missed her so much! I wish we lived closer! After the shower, mom and I started the drive to Grandmas! When we got there, Jagger was so happy to see me! Dad said he was so good all day! At Grandmas everyone was sitting outside enjoying the weather. My uncle had fried fish, so we just sat around and ate! Jagger decided he wanted to show everyone his batman costume, so we put it on and he entertained us for hours! My uncles were laughing so hard they were crying! Once it got dark, everyone was ready for bed. Grandma's house was full, so Jagger and I went to Aunt Brenda and Uncle Dannys! Jagger loves them so much! We slept so good and woke up late the next morning! We all went back to Grandma's for lunch! After lunch we came back home and spent the rest of the day with Matthew's family!!

Pretty Boring!!

I have not posted in awhile and I am not sure if it is because we have had a pretty boring life  the last few days or I just don't know what to write about! It maybe a combination!! I am trying to think of what we have done this last week! I did take Jagger back  to the allergist for a checkup! He is doing OK. He started scratching again so they have switched his medicine! I am hoping this helps!! I hate that he just walks around scratching! I also went to the doctor! I had a double sinus infection and sinusitis??? Yes..I have major sinus issues! I was so sick...I thought I was dying! That is pretty much all that has been going on around here!!
Yesterday, Grandma Betty got the pool almost opened! The guys came and took the cover off and started cleaning it! Of course, we had to go over and Jagger had to get down on the steps!! He was so excited! They are suppose to have it finished Friday, so I am thinking this little boy will be swimming this weekend when we get back! I am excited because we are going to mom's this weekend! I am glad that we are going to see her on Mother's Day!

Food!!!!

So, if you know me then you know I LOVE to eat!!! Sometimes I have to stop myself from thinking about it all the time! I grew up with a family that centered everything around food, so it comes naturally! Everyone in my family can cook, so holidays or even just a normal day includes good food! When I was still living at home I started gaining an interest for cooking. I started cooking one night a week for mom and dad! It was a good starting point for me! At one time I wanted to go to culinary school but decided I didn't want to go far off by myself so that ended that one! I love everything about cooking! I love all the tools, the food, the prepping, watching the process of the food cooking and then of course the EATING!! The last few days I have cooked some meals that have been some of the best things I have made in along time! I hope if you try them that you and your family will enjoy them as much as we did!
The first one I did several weeks ago. It was a blackened grilled chicken on top of a creamy pasta!! WOW!! IT was unreal!!! I found the recipe from Plain Chicken.
Chicken1/2 cup olive oil
1/2 cup ranch dressing
3 Tbsp Worcestershire sauce
2 Tbsp Cajun seasoning
2 tsp salt
1 tsp lemon juice
1 tsp white vinegar
1/4 tsp ground black pepper, or to taste
1 Tbsp white sugar, or to taste
4 skinless, boneless chicken breast halves

In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, cajun seasoning, salt, lemon juice, white vinegar, pepper, and sugar. Let stand for 5 minutes. Pound chicken breast to 1/4" thickness. Place chicken in the gallon size ziplock bag, and stir to coat with the marinade. Cover and refrigerate for at least 2 hours (the longer the better). Preheat the grill for medium-high heat. Grill chicken for 8 to 12 minutes, or until the chicken is no longer pink in the center, and the juices run clear. Slice and serve over pasta.

Pasta
16 oz bowtie pasta
2 1/2 cups heavy whipping cream (can substitute evaporated milk)
3 cloves garlic, crushed
1 Tbsp pepper
2 tsp Cajun seasoning
1/4 cup butter
1/2 c. shredded Parmesan cheese

Cook pasta according to package directions. Drain; set aside.

In a small saucepan, melt butter, add garlic, whipping cream, Cajun seasoning, pepper, and Parmesan cheese. Whisk together on low heat for 5-6 minutes. In a large bowl, pour over cooked, drained pasta. Top with Cajun ranch chicken and sprinkle a little bit more shredded Parmesan cheese on top.

The next one is a Mexican Dish!!!! Warning- it is spicy!!! Its Mexican Chicken with Rice and it also came from Plain Chicken!
4 boneless, skinless chicken breasts
1 bottle Lawry's Baja Chipotle marinade or Lawry's Mesquite Marinade

3 Tbsp vegetable oil
1 cup uncooked long grain rice (not instant)
1 Tbsp dried minced onion flakes
1 tsp garlic salt
1 tsp Pampered Chef Southwestern Seasoning or Taco Seasoning
2 cups chicken broth
1/2 cup tomato sauce

1 container Mexican Queso
chopped tomato

Pour Baja Chipotle Marinade over chicken and let marinate in the refrigerator for 30 minutes or overnight. When ready, grill chicken until done (165 degrees).

While the chicken is grilling prepare the rice.

Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and Southwestern or Taco Seasoning.

Stir in onion flakes, tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.

Heat cheese dip according to package directions set aside.

To assemble the Pollo Loco - place 1/4 of the rice on a plate, top with grilled chicken. Pour 2-3 Tbsp cheese dip over chicken and rice and top with chopped tomatoes.


Last night, I decided to make something sweet! Monday night at our last Bible study, Meghan brought Smores Dip!!! It was so good! Matthew's sister are home for the summer so I thought it would be a good welcome home snack!
It is so easy!!   Take 1 package of chocolate chips, mix with 1 can of condensed milk. Microwave until melted- stopping to stir several times. Once melted pour in 9x13 and randomly put spoonfuls of Marshmallow cream. Put back in microwave for 30 seconds. Take knife and swirl marshmallow!! use graham crackers to dip in!! so yummy!!!
Sorry mine is not that pretty! but I think it could be!! but it was so GOOD!!!

Matthew LOVES shrimp! Anything shrimp he is in love!! So for lunch, I made shrimp! It was a lemon butter shrimp served over brown rice! So yummy!
1 lb. shrimp {fresh or frozen…I used frozen…just make sure to thaw first!}

1 stick butter, melted

1-2 lemons, sliced thin

1 pkg. dry Italian seasoning {I used Zesty Italian, Good Seasoning}

 First off, line a baking sheet {with edges!!!} with foil. Slice the lemons and randomly place them on the baking sheet.

elt your butter and pour it on top of the lemons making sure that it’s spread evenly over the baking sheet.

I placed my shrimp {peeled & deveined} in a large ziplock and then tossed in the packet of Italian seasoning, shook it up real good until the shrimp were evenly coated, and then poured the shrimp on top of the butter & lemon on the baking sheet.

Now bake at 350 for about 12{ish} minutes and then remove from the oven.  I found this yummy dish from Pearls, Handcuffs, and HappyHour. She has a ton of great recipes!!!


Well as you can see the last few days we have been eating good food! Oh..I almost forgot..every summer we have ducks that fly in and stay at the creek right next to our house!! The even walk up in the yard! They are so cool....
Jagger and Matthew just stand out there forever and watch them!!!

What I'm Loving Wednesday!!

I can't believe its already Wednesday!!! and that its May! Where has this year gone???

I'm LOVING that we are only a few weeks out from enjoying the pool!!! Wow! I can't wait! I'm still trying to find a bathing suit....its kind of irritating me because I refuse to parade around in a string bikini but I don't want to look like a grandma either!!! and while I'm on this...do you find it frustrating how EXPENSIVE swimsuits are????? what the mess? I mean come on..they are less clothing but cost more! I am wanting a takini and they are triple than a bikini? I don't get it! Maybe I am just weird!  (Sorry to just go off on that! Guess we all need to vent!)

I'm LOVING Organic/Healthy Food...now before you starting getting worried that I am turning all vegan and not feeding my family! No...that is not it..I am just starting to add new things to our diet and surprising we LOVE it....these are my favs...
Im ADDICTED to this cereal!! Its awesome..I have tried Kashi before and was not happy but this is so good! I could eat it 3 times a day! I actually look forward to this! and since I am drinking with 1% I feel pretty good about breakfast!

Everything Boca is great!!! Even Matthew and Jagger approve!

I do not drink this by itself but I have started using it in my coffee! The vanilla is so good....and I am not drinking near the calories as with regular milk!

I was scared to try these at first since they were just $1.00 but I am so glad I did...they are great!!! I Love them...I can eat almost 3 of these and still not get close to fat content and calories in regular hot dogs! I eat my hot dogs loaded with condiments so you can not tell the difference! Totally worth trying!! Even Jagger likes them!

These are my all time favs!!! I keep them at all times! When I am craving chocolate this is my go to! With weight watchers they are 1 point! You just pop it in the microwave for 30 seconds and you have an awesome warm brownie treat that is not bad for you!!! Yum..think I will have one right now!
I'm LOVING that my sweet boy is starting to bring home art from school!!! Its so sweet!

I'm LOVING my new project!....
I took all of our cards and separated them out! Once they were separated, I hole punched them and put them on a ring holder! I did one for Jagger, Matthew, Myself, and each Christmas! I got a cute basket to put under the coffee table to store them! I am going to add a cover and some ribbon! I think they will be cute to look back on over the years!!
and last but not least, I am LOVING my Heavenly Father and my 2 boys!

Lots Of Catching UP!

My heart is completely melting right now because Jagger is sitting here beside me telling me that he is going to have a baby brother and baby sister! He is telling me that their names will be Cutie and Cutie Pie! He is telling me he will be the best big brother, he will give them his toys, and he will save them from rangers (Strangers..he just calls them Rangers!) and no I am not pregnant! I am going to my new doctor in June so hopefully we will start trying after that!!  I love my Jagger so much and he is so sweet that it melts my heart everyday! I pray to God that he stays this way even when he is older!
So anyways, the last few days we have been super busy! I have not even had a chance to sit down and upload the pictures I have taken! It has been good madness!
Friday night, the hubby and I went to the Chamber of Commerce banquet! It was so awesome! They had tons of amazing food! It was several tables with different themed food at each one! All the food was something that associated with our city! I loved it...lots of Southern food!!!!! I about made myself sick! I loved getting to visit with everyone! They also had a photo booth, which I LOVED!!!
My husband is the best!! Love him so much!

Saturday- Birthday Party! Denise's granddaughter, Weslyn had her 2nd birthday party! It was outdoors at a big forest/park! They rented a big pavilion and had a blow up jumpy castle for the kids! This place has a big lake that goes around the whole park so Jagger and Matthew loved getting to see all the ducks! It was great!
I love giving FUN gifts! The sand pale had a bathing suit, towel, sippy cute, bubbles, and sunglasses!!

Sunday- I felt HORRIBLE on Sunday! At church, I started feeling dizzy and light headed! I left and by the time I got home I had body aches and fever! I took some medicine and about 2 hours later I felt better. I ate lunch and then after that it came back! I took a nap and started feeling better again! I am not sure what happened to me but I am glad that it did not last any longer! :)
Monday- Jennifer and I took the boys to the Memphis Zoo! It was awesome! We had the best day and the boys had such a good time!

Today has been a great day also! Jagger went to daycare this morning. When I picked him up we came home and went for a walk! I put him in the stroller and I think we did about 2.5 miles! When we got home we went and watched Pa Don plant cotton! When Matthew got home from work, we ended up walking again! We did another 2 miles..so I was very happy to get exercise in today!
